Broccoli Slaw

Slaw Ingredients:

  • 1 cup of shredded carrots

  • 1 cup of shredded broccoli stalks

  • 1 cup of red cabbage

  • 1 cup of green cabbage

  • 2 apples, diced

  • 1.5 cup of edamame

  • Sliced almonds to top


 

Dressing Ingredients:

  • 2 cups of non-fat plain Greek yogurt

  • 1 tablespoon white balsamic vinaigrette

  • Juice of 1 lemon

  • 2 tablespoons of Dijon mustard


 

Directions:

  1. Prep vegetables and fruit

  2. Combine vegetables and fruit in bowl

  3. In a separate bowl, add yogurt, white balsamic  vinaigrette and lemon juice and stir

  4. If dressing is not at desired consistency, add additional white balsamic vinaigrette or lemon juice until thin

  5. Once at desired consistency, add Dijon mustard *note, Dijon mustard will make dressing slightly thicker

  6. Add dressing to slaw and thoroughly mix

  7. Top with sliced almonds and serve!
